Each package contains 4 hand cut, double sized chops.
Thaw and Season to your liking. No cooking oils are required unless you prefer them for flavor. Preheat your oven to between 450 to 500 degrees. Sear both sides on a flat top or in a pan to caramelize and seal in the flavor. Roast in the oven until the internal temperature reaches between 125 to 130 degrees. It’s ok to use a meat thermometer. Remove from the oven and allow to rest for approximately half of the cooking time. This will bring your chops to medium rare. While resting, it’s best to capture the most flavor by cooking your vegetables, potatoes, or mushrooms in the seasoned, rendered fat that drips from your chops.
